Smoothie Bowls-Σμούθι Μπολ


What exactly is this Smoothie Bowl? Why has it become so popular? Is there something special about it?

Well, a Smoothie Bowl in the way I see it is simply a normal smoothie you would normally put in a glass or jar poured into a bowl and decorated with either fruit, super-foods, granola, nuts, seeds, etc.

I am not a great fan of sipping on smoothies or shakes, especially when the weather starts becoming colder. In the summer it is easier to do so. So I prefer to add all my ingredients in  my food processor or blender, blend them all up, add them in a bowl, add the rest of my ingredients of choice and enjoy with a spoon. It makes me feel that I am eating something and not drinking.

So what do we use for a smoothie bowl? You can use whatever you like. Veggies (fresh or frozen), muesli,oats, granola,  fruits( fresh, dried or frozen), ice, milk, yogurt,  nuts, seeds, nut/seed butters and list goes on…. whatever you enjoy. The nice thing is that you get to be creative and use ingredients that are healthy and of your preference.

I usually enjoy making mine with almond milk, and frozen berries. I then slice up a banana and add it on top. I sprinkle some nuts or seeds and viola it is ready.

So get in your kitchen and be creative!


Τι ακριβώς είναι το Σμούθι Μπολ? Γιατί έχει γίνει τόσο δημοφιλής? Έχει κάτι το ιδιαίτερο?

Λοιπόν, το Σμούθι Μπολ είναι απλά το συνηθισμένο σμούθι που φτιάχνουμε και πίνουμε με το καλαμάκι απλά αυτό το αδειάζουμε σε μπολ, το διακοσμούμε με κάποια υλικά όπως φρούτα, ξηρούς καρπούς ή σπόρους, υπερτροφές, γκρανόλα, κτλ και το απολαμβάνουμε με το κουταλάκι.

Το καλοκαίρι προτιμώ να απολαμβάνω το σμούθι με το καλαμάκι, τις πιο κρύες μέρες προτιμώ να το τρωω με το κουταλάκι.

Τι χρησιμοποιούμε για να φτιάξουμε το σμούθι μπολ? Ότι θέλουμε. Λαχανικά (φρέσκα ή κατεψυγμένα), φρούτα (φρέσκα, αποξηραμένα ή κατεψυγμένα), μούσλι, βρώμη, γάλα, γιαούρτι, πάγο, νερό, ξηρούς καρπούς και σπόρους, βούτυρο ξηρών καρπών (π.χ φυστικοβούτυρο), και η λίστα συνεχίζει…. οτι απολαμβάνεις το προσθέτεις.Το ωραίο είναι πως γίνεσαι δημιουργικός και χρησιμοποιείς υγιεινά συστατικά κατά τη δική σου προτίμηση.

Συνήθως το προτιμώ με γάλα αμυγδάλου, κατεψυγμένα μούρα. Έπειτα κόβω μπανάνα σε φέτες, λίγους ξηρούς καρπούς και είναι έτοιμο!

Raw Chocolate Energy Balls- Ωμοφαγικές Μπάλες Ενέργειας


These are a great treat/ snack for those days of the month when you are craving chocolate. They are simple to make and do not need to be baked. They are suitable for those on a non dairy, gluten free, vegan/vegetarian lifestyle. They are a great and healthy snack for children too.

Let’s go and make them!


  • 1/2 cup walnuts
  • 1/2 cup raw almonds
  • 1 1/2 cups Medjool dates pitted and soaked in water if they are too dry
  • 2-3 TBS cacao
  • 2-3 TBS water
  • 1 tsp vanilla extract
  • 1/2 cup rolled oats


Put everything in your food processor and process until a dough is formed. Roll into balls and refrigerate.

*Before you place them in the fridge you may melt some dark chocolate and dip them in and then roll them in hemp seeds/ unsweetened desiccated coconut.



Οι μπάλες αυτές είναι καταπληκτικές για κάτι γρήγορο ή για σνακ ιδιαίτερα τις μέρες αυτές του μήνα που θέλουμε να φάμε σοκολάτα. Είναι πανεύκολες και δεν χρειάζονται ψήσιμο. Μπορούν να καταναλωθούν και από άτομα που δεν τρώνε γαλακτοκομικά προιόντα ή γλουτένη. Είναι κατάλληλες για χορτοφάγους και βίγκαν. Αποτελούν και ένα υγιεινο και καταπληκτικό σνακ για παιδιά.

Για πάμε να τις φτιάξουμε!


  • 1/2 φλυτζ. καρύδια
  • 1/2 φλυτζ. ωμά αμύγδαλα
  • 1 1/2 φλυτζ. χουρμάδες  Medjool χωρίς κουκούτσι. (μουλιασμένοι στο νερό αν είναι αποξηραμένοι)
  • 2-3 Κ.Σ  Κακάο
  • 2-3 Κ.Σ  νερό
  • 1 κ.γ υγρή Βανίλια
  • 1/2 φλυτζ. Νιφάδες Βρώμης


Τοποθετείτε όλα τα υλικά μέσα στον επεξεργαστή τροφίμων και τα πολτοποιείτε μέχρι να σχηματιστεί μια ζύμη. Τα πλάθετε σε μπάλες μικρές και τα βάζετε στο ψυγείο.

  • Πριν τα βάλετε στο ψυγείο, μπορείτε να λιώσετε μάυρη σοκολοτα 72-100% να τις βουτύξετε μέσα και μετά να τις περάσετε από τριμμένη καρύδα ή σπόρους/ξηρούς καρπούς.

Καλή Απόλαυση!!!!

Greek Cannellini Bean Soup- Fasolatha (pronounced: fah-so-LAH-thah)


Fasolatha is truly the national dish of Greece. We all know souvlaki and moussaka but this Bean Soup is literally the traditional Greek dish.

This dish has its roots all the way back to Ancient Greece were beans were thought to be very beneficial for the body. You can find it in many variations according to each village. The two most common ways though are with tomatoes or plain white.

We all know beans are a great source of protein, fiber and healthy carbs which are very good for our body and also our gut health.

It is considered both a vegan/vegeterian dish and could also be consumed by those following the Orthodox Fasting days.

Okay let’s get started!

Ingredients (for plain white version with lemon juice)

  • 500gr dried cannellini or navy beans soaked overnight
  • 1 large onion finely chopped
  • Celery leaves finely chopped
  • 2-3 Medium carrots chopped
  • 1/4-1/2 cup extra virgin olive oil
  • 4-5 cups water
  • salt- pepper to taste
  • lemon juice


Drain the beans that you have soaked overnight. Place them in a pot of water and bring them to a boil. Let it boil for about 10 minutes. Drain and rinse them.

Put the olive oil in the pot add the chopped onions and carrots and simmer for about 5 minutes until onions are translucent. Add the beans, the pepper and the water. Let it boil until the beans are soft and the soup is kind of thick. Once they are soft add the salt and the celery leaves and boil for another 5 minutes.

Serve it hot in a bowl and add the freshly squeezed lemon juice. Olives and fresh sourdough bread can be used as a side dish. You may also add chili pepper flakes in the soup for a spicy version.

* If you prefer it with tomatoes just add some puree while it is boiling.

Developing a quiet time- Be Still


In a chaotic society were everyone and everything is under pressure and stress, we all need a time throughout the day where we just sit still, empty our mind of our thoughts, struggles and problems and seek peace. Many call this meditation, I call it my quiet time.

What time of the day do I usually sit still? There really is not set time. It depends on each individual.

I usually start off my day with some quiet time. I like to have my first cup of coffee, my Bible, my journal and a pen.  I like to begin by thanking my Lord for the gift of each new day. Do you know that everyday is a gift to us? It should be cherished. I then open up His word and allow Him to speak to me. His Word is Alive and Active (Hebrews 4:12). During this time of me allowing Him to speak to me, I am totally still. I am learning through this to surrender myself wholly to Him. When I say wholly I mean body,mind and spirit. It is the time I empty myself of me, of my carnal desires, of my struggles, of my failures, of my sins and become and empty vessel where I can be filled by Him. His thoughts become my thoughts. His desires become my desire. His will becomes my will.

As I sit there just breathing I want this breath which truly does not really belong to me be refreshed and renewed. I want Him to breathe in me again.

His fresh breath will fill me up with such peace and energy to help me through out the day.

Does it mean my problems will be solved and vanished? Does it mean I will suffer no more? Does it mean I will have no temptations? No, problems, sufferings, temptations will always be here on this journey called life. The difference is by spending time alone with Him, being still and knowing that He is God gives me the strength, peace and tools to continue on this journey.

Sometimes, if I don’t have time in the morning or if I am having a very hectic day, I will try to take some time out and just be still before Him. I exhale my anxieties. I inhale His breath of peace. I exhale my anger. I inhale His peace, and so on…

I encourage you find some time in your day and be still before Him. You will be transformed.

Listen to your body


One huge problem in today’s world is listening. People do not take the time to listen. The same applies for our body. We need to take that time to be still and listen to what it is trying to say to us.

God created everything in us in such a perfect way. It is amazing to see how each organ, cell, etc functions in us.

These past two and a half years I have been trying to listen more and more to what my body needs. I have learned to study myself. There are certain things I can not have and there are things my body craves for. My taste buds have changed. My desire for certain foods such as (chocolate, sugary desserts, chips, etc) has changed. I no longer crave them and if I do eat them I feel sick.

I have the flu. Many tell me to eat certain foods, to take antibiotics, etc. Please do not get me wrong here, if it is necessary to take antibiotics prescribed by your doctor then yes by all means take them. I am fighting this on my own for now, but if I don’t see any improvement than I shall see my doctor.

Since I have been sick, I do not want to drink coffee, I do not want any dairy products apart from yogurt or kefir and I am craving more fruit, veggies herbal tea and water…

You see about a week or so ago, I was consuming a lot of coffee, I also had some diet coke, and some other food that I had cut out of my lifestyle for the past 2 years.

I am not saying that this led to me getting the flu, but what I am learning by listening to my body is that it wants to get rid of that “junk, toxins” that I had fueled it with. It is similar to a car. If you put good quality gas it will run well, if you don’t it will cause problems.

So take some time and start to listen to what your body is trying to say to you.

Today is day 3 of the flu. I am trying to stay as hydrated as possible, drinking plain warm water and also some warm water with ginger, lemon and turmeric. I had a great Cold and Flu fighting smoothie in the morning which I will post the recipe at the end of this post. I had my super bowl soup (check here for recipe) for lunch and not sure what I will have for dinner. It depends how I feel.

Challenge yourself today to take some time and be still. Listen, all you need to do is stay still and listen…

Recipe for Cold and Flu Smoothie


  • 1 orange peeled
  • 2 mandarins peeled
  • 1 banana
  • the juice of half a lemon and lime
  • a small amount of fresh ginger
  • 1 tsp honey ( I used Pine Honey) or any natural sweetener of your choice
  • 2 TBS chia soaked in water for 5 minutes
  • and some water or plant/nut milk ( I used water)

Toss everything in your blender or food processor. Blend and enjoy!!!

I have been living in Greece for nearly 32 years and this has been the coldest and most wet and damp winter I have ever experienced.

I use to be a winter person but I will be honest I have been asking for summer to come as soon as possible.

Yesterday was February 1st and after nearly two months of dark grey skies, rain, snow, and very low temperatures, the sun is seen in the sky. Greece is known for sunshine and blue sky all year round, well this winter has surely surprised us.

As the day was going by and I cooked for the family and then for myself, I took Silas our dog out and felt aches and pains all over… I thought it might be just the change of weather but this was a little warning that I was coming down once again with a cold.

By 5 p.m. I was running a fever, coughing and shivering all over.

I will be honest, I did grumble and mumble but of course that doesn’t change anything, does it?

Well, today is another beautiful sunny day and I am stuck home moving from the bed to the couch, sipping hot tea and water and feeling blahhhh…

Hubby and daughter went to work. Dear daughter took the dog out before she left home.

I needed to make some hot soup. That is what my body was craving. Our body does talk to us, we just need to learn to listen to it.

I had a few leftover roasted veggies ( 1/2 sweet potato, 2 beets, 1 carrot, 2 broccoli florets, 1 cauliflower floret). I put them in a pot and added some onion, garlic, green and purple kale, spinach, green onions, leeks, and brussel sprouts and let them boil for a max of 20 minutes. Once it was ready I immersed my hand blender and blended it until it was nice and smooth.  I served it with a TBS of Greek Strained yogurt ( Probiotics).

I really wasn’t sure how it would turn out but it was truly delicious. Especially with the herbs I used (ginger and turmeric).

I think this bowl is a super bowl full of antioxidants, vitamins, minerals and other nutrients that help our body. Let’s take a look at each item:

Kale: Is high in nutrients and low in calories. It is a loaded with powerful antioxidants, it is one of the most excellent sources of vitamin C and vitamin K. It has cancer fighting sources, it helps lower cholesterol, it is very high in Beta- Carotene and many minerals such as calcium, potassium, magnesium and more. It has powerful nutrients like Lutein which protect the eyes. This is just a synopsis of the benefits of Kale.

  • Beetroots: They are a good source of iron and folate.  They contain nitrates, betaine, magnesium and other antioxidants. They help lower blood pressure, and prevent dementia.
  • Sweet Potatoes:  They are an excellent source of vitamin A. They are also a good source of vitamin C, manganese, copper, vitamin B6, potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus.
  • Carrots: This root vegetable is a great source of beta- carotene, fiber, and antioxidants. It is very rich in Vitamins A, C, K, B8, iron, copper, manganese, folate, potassium and pantothenic acid.
  • Broccoli: It is a great source of  fiber, pantothenic acid, vitamin B6, vitamin E, manganese, phosphorus, choline, vitamin B1, vitamin A, potassium, copper, vitamin B1, magnesium, omega-3 fatty acids, protein, zinc, calcium, iron, niacin and selenium.
  • Cauliflower: A great source of choline,  fiber, omega-3 fatty acids, manganese, phosphorus, biotin,  vitamin B1, B2, and B3, the minerals potassium and magnesium, and protein.
  • Spinach: It is high in niacin ,zinc,  protein, fiber, vitamins A, C, E and K, thiamin, vitamin B6, folate, calcium, iron, magnesium, phosphorus, potassium, copper, and manganese.
  • Brussel Sprouts: They are an excellent source of vitamin C and vitamin K,  folate, manganese, vitamin B6, fiber, choline, copper, vitamin B1,potassium, phosphorus and omega-3 fatty acids.
  • Green onions: They are a great source of vitamin C, potassium and quercetin.
  • Onions: They have antioxidant and anti- inflammatory properties
  • Garlic: It has anti-inflammatory, anti-bacterial and antiviral benefits.

Now do you see why I call this a super-foods bowl soup?

I am going to make a hot cup of ginger, lemon, turmeric and honey tea to help soothe my throat.

One Word 2017



I can’t believe that we are already in 2017. It feels like yesterday to me when I was writing about my One Word for 2016.

For those who do not know this, a few years ago I started praying at the end of the year and asking the Lord to give me a word that I will meditate on and apply it in my life. In 2014 He gave me the word: “Sufficient” He taught me throughout that entire year that He was more than enough for me. In 2015, He gave me the word “Trust”, I thought I trusted Him in all things but all through that year He showed me I needed to truly Trust him not simply with words but with my actions. In 2016, He gave me “Joy”, teaching me that His Joy is my strength no matter the circumstances in my life.

Truly each year has been a great lesson and a huge blessing. I am seeing a connection between these words which lead to my ONE WORD for 2017- “CHANGE”.

Once you come to realize that He is Sufficient for you, you learn to submit entirely to Him and trust Him, no matter what may come your way “It is well”because He is your joy and His joy is the strength we need. So this year will be a year of “Change”. It will be a year of transformation both inwardly and outwardly. Just like a butterfly; before it becomes a beautiful butterfly it is a caterpillar that crawls on the ground. When it is changed/transformed it flies!!!!!

So I am truly anticipating to see what this year of Change will bring. I am still searching for a job, nothing has opened up yet. I still need to lose some more weight to reach my goal weight. Many issues around me that are still unsolved. He knows. He keeps telling me for the past 2 years “I know the plans I have for you…”Jeremiah 29:11

I hope you join me on this new journey in 2017. I will be writing here once again. He never allowed me to shut this blog completely. He always brought an obstacle in my way each time I would consider deactivating it permanently.

I am so grateful for each and everyone of you and I am also blessed to have you all in my life, even though we are many miles and seas apart with many of you.
