Greek Lentil Soup (Fakes)- Easy, delicious and frugal

The weather has cooled down abit this month. Usually the temperatures are way up for the season but this year it has decided to change. Seeing that it wasn’t a very hot day today, I decided to make Lentil soup. It is such an easy dish and a very tasty and healthy one too. Here are the ingredients below.

Ingredients

½ kg brown lentils

1 medium-large onion grated

3 cloves garlic roughly chopped

1-2 carrots chopped (optional)

 olive oil

2-3 bay leaves

Pinch of oregano (optional)

Pinch of mixed spices (optional)

1-2 Vegetable stocks

Salt & pepper to taste (Use less salt if using stock)

Water

 Preperation

Rinse the lentils well in a colander under running water.

Put the olive oil in the pan with the onion and garlic and saute for a few minutes. Add the carrots, lentils and bay leaves.

Add enough water to cover them plus a little more above them. Add the oregano, spices, vegetable stock and pepper.

Bring to the boil and then simmer for at least 1 hour or until the lentils have become very tender. Towards the end taste it and if you are  going to use salt add it then and let it simmer a few more minutes.
