Greek Chicken Soup ( Kotosoupa Avgolemono)

Last week my daughter came down with a cold. She had raised a temperature and was very congested. I decided that one of the best remedies was Greek Chicken Soup (Kotosoupa Avgolemono). It is a great dish for the very cold days of winter. It is comfort/healing food for the body…

Here are the ingredients:

  • 1 medium to large chicken ( 1,5 – 2 kilos)
  • rice for soups
  • salt
  • pepper
  • 2 eggs
  • juice of 1-2 lemons

Wash the chicken well and cut it up into 4 or 8 pieces. Place it in a large pot and cover with water. Once it starts to boil, take a spoon and remove all that froth until the water it is boiling in is clean. Add salt and pepper and let it cook until it is tender.

Once it is cooked, remove it from the pot and let it cool down abit so you can remove all the bones and fat. Cut it up into small pieces with your hands and place it back in the pot, where you have added some extra water and about 3/4 to 1 cup of rice. Once the rice is ready reduce the temperature and in a bowl break the two eggs. Add a little salt and pepper and beat them well. Pour in the egg mixture the lemon juice and with a ladle pour some of the soup broth in the egg- lemon mixture whisking it continuously. Pour that mixture in the soup and let it boil for 3 minutes and turn it off.
