I hope you all enjoyed Christmas with your family and loved ones. We all went to my brother’s house for Christmas and had such a wonderful time.
My sister in law had made some delicius dishes such as mince meat with leeks pie, cheesepie with bacon, stir fry pork with vegetables, 2 amazing salads, oven roasted potatoes. We both made turkey and stuffing and I made an apple cake with browned butter and brown sugar frosting for dessert. Of course this wasn’t the only dessert that was on the table.. We had the traditonal Greek Christmas desserts: Kourabiedes and Melomakarona and Diples, my nieces mother had made a wonderful semolina cake- Halva…
We had a lot of fun, danced, played some board games and got home at 2:30 a.m…
Here is the recipe for the Cake:
- 2 eggs
- 1 cup brown sugar
- 3/4 cups sugar
- 2 tsp cinnamon
- 1 tsp all spice
- 1/2 cup vegetable oil
- 5 apples peeled and chopped in cubes
- 2 cups self-raising flour
Beat the eggs, sugar, cinnamon, all spice and oil well. Add the apples and fully coat them in the mixture. Add the flour and mix well. Pour in a greased pan for about 45-50 minutes in a pre-heated oven at 180 degrees Celsius.
- 120 gr butter
- 2/3 cups dark brown sugar
- 2 1/4 cups confectioner’s sugar
- 1/4 tsp salt
- 1/4 cup milk
- 3/4 tsp vanilla extract
Melt the butter in a small pan over medium heat until it turns brown. Stir in the brown sugar and salt and cook, stirring, until the sugar melts. Add the milk, bring to a boil, and pour into a mixing bowl to cool for 10 minutes. After 10 minutes, stir in the confectioners’ sugar and vanilla. Beat well; if the mixture appears too thin, add more confectioners’ sugar. Spread on the cake while frosting is still warm.
